Backups and restore

Every app's database is backed up nightly and replicated off-site; restore from the dashboard or with percher restore.

Every app's PocketBase database is backed up automatically each night, and the archives are replicated to off-site storage. Restore a backup from the dashboard or with percher restore — by date, by backup id, or just the latest.
